Last week, Hubby and I had a pretty delicious, simple dinner. And it reminded me of the simple dinners we had in Italy.
I studied abroad in Italy in 2008 and it was magical. I left a piece of my soul of there, for sure!! Hubby came to visit me and we saw the sights of Rome, drank wine al fresco and discovered our shared love of gelato. Hence, the blog name 🙂
We went back to Italy in 2012 with my family and, again, it was perfection. We ate bruschetta every day, caprese salads and amazing red wine.
In order to bring that feeling back with us, we eat Italian food at least 3 times a week. And, it’s pretty much the only food I know how to make because my mother is 50% Italian and makes really delicious Italian food.
Here’s our meal from last week:
I made bruschetta with a side of proscuitto di parma and we drank red wine. Amazing!!
Ingredients for bruschetta:
I cut the tomatoes, put them in a mixing bowl and combine with garlic, salt, olive oil and balsamic vinegar. As I’m doing that, I put pieces of Italian bread in the toaster so it is just a little toasted and then I top the bread with tomatoes. I cut fresh basil and then drizzle over everything.
It is so simple, but sometimes simple food is the best food. It’s filling, too.
The proscuitto di parma is THE type of proscuitto to get. It’s a combination of salty, fatty and meaty. I would eat this meal every single day. I would trade a million dollars to live in Italy. Well, maybe not a million dollars…but I would trade a lot to live abroad.
