Friday Favs {October 21}

Friday, Friday, Friday! It’s been a pretty standard week over in my house and I am looking forward to a weekend of grabbing drinks with friends, my first German eye doctor appointment, planning our trip for next week and getting in some good work outs.

And since it’s Friday, it’s time to share my Friday Favs from this week.

Amanda Knox Documentary

I watched the Amanda Knox documentary on Netflix on Wednesday. I was really interested in this case when it happened in 2007. And probably because I wanted to study abroad in Rome the next year, which I did and it was amazing!

If I had to give one word to describe this documentary, it would be creepy. The story itself is creepy and awful. A nice English girl is studying abroad in Perugia, Italy and ends up dead. A parent’s worst nightmare. Amanda is in the documentary and talks fist hand about the experience. And she is creepy. She meets a guy, starts dating him for five days and apparently smokes a lot of pot and “makes a lot of love.” <— She said making love about 13 times. Gross.

The documentary doesn’t really lean towards innocent or guilty, but presents all sides of the story. Amanda’s boyfriend, the prosecutor and a journalist from the Daily Mail are all interviewed. After watching, I do feel that Amanda did not do it but she is socially awkward.


My favorite line from the entire thing comes from an attorney for Rudy, a man convicted of Meredith’s murder. He is talking about his feelings when America learned of all the bad DNA testing in the case, “We are in a building built in 1308 to discuss law for the first time in Europe. In America in 1308, you were drawing buffalo in a cave.”


I went to my Bodypump class on Wednesday. A new track was released and it was great! There were more triceps than ever before and I am hurting today. I love this class. I love that it is challenging, the instructor is motivating and I can feel my muscles getting stronger. I am still sore today.

Real Housewives of Orange County Episode

O.M.F.G. I have watched this week’s Real Housewives of Orange County episode three times. I am not ashamed to admit this. The ladies are still in Ireland and whopping it up. My favorite part was the last few minutes when Kelly just starts going OFF on everyone. There is seriously something wrong with this woman. And what is it with Kelly’s and the real housewives? Kelly Bensimon and Kelly Dodd should have their own show. The drama is insane and I can’t believe some of the things that came out of Kelly’s mouth!

Healthier Chicken Fried Rice

Last night I made a homemade, healthier version of chicken fried rice. And, oh my goodness, it was delicious and so easy to make. I loosely followed this recipe from Averie Cooks.

Here’s exactly what I did:

Cook rice.

Put about 4 tbsp of vegetable oil in a wok and cook strips of chicken.

Cook chicken until almost finished and put on a plate on the side.

Add broccoli, white onion and carrots to the wok. Cook for about 2 minutes. Add some garlic and cook for another 2 minutes.

Push veggies to one side and add 3 eggs. Scramble eggs and mix with vegetables.

Add chicken and cook for another minute.

Add rice to the wok and mix together. Add soy sauce, salt and pepper. Mix together.

Enjoy! It tasted so good and the smells were spot on.
