I don’t share a ton of recipes on here but I’ve made this quinoa salad for lunch five times in the past month and it is just too delicious not to share! This salad is light, yet filling, which is exactly what we all want for summer months, right? It would make a great dish to bring to your next BBQ.
Here are the ingredients:
Make quinoa according to the package instructions. I cooked 1 cup of quinoa in 2 cups of water in boiling water for 15ish minutes, until the water is absorbed. While the quinoa is cooking, I cut all the vegetables and the cheese into chunks.
You can use any vegetables you have on hand really. I love feta cheese and would use the entire package if it wasn’t awful for you to eat in one sitting.
After the quinoa is cooked, combine all the ingredients. Pour olive oil over everything and add a dash of salt and a pinch of oregano to taste.
Even though this is incredibly simple, it is incredibly delicious! Enjoy!
