Taco Casserole Recipe

Hubby and I enjoy tacos on a weekly basis. Usually it’s Taco Tuesday and we look forward to it starting…oh, Sunday night! Sometimes they are taco salads, sometimes burritos, sometimes burrito bowls, but there is ALWAYS a taco dish on the weekly meal plan.

This past Monday, I wanted to mix it up and perused the internet for some inspiration. I stumbled upon this recipe on Betty Crocker’s web site and knew I had a winner! I made a few adjustments to make it a little healthier and it turned out great. Here’s my concoction…

Preheat oven to 350 degrees
Brown 1 lb. of beef
Add 1 packet of taco seasoning
Add 1 can of black beans and salsa, enough to cover the beef
Pour beef, beans and salsa into oven-safe casserole dish
Top with chopped red onion, red bell pepper and taco shredded cheese
Bake in oven until cheese is melted (I baked for about 17 minutes)
Top with sour cream, plain Greek yogurt, more cheese, lettuce, ANYTHING.
And enjoy.

Side note: I can not wait for the day when we have a gas stove. Like literally would kill for a gas stove! And a big kitchen…with a big island….and bar stools…and a farm sink….oops, I got a little side tracked. 


I topped mine with a dollop of plain Greek yogurt, tomatoes and lettuce. I then combined everything together for a great little salad. Hubby used tortilla chips as a base for more of a nacho feel. I admittedly used a few tortilla chips for my second helping! 

And the leftovers were just as good. I brought some into work for lunch and it was the perfect, filling lunch!

I think this recipe will definitely make an appearance in our weeknight dinner rotations. Everything came together in less than 30 minutes and satisfied our taco cravings.
